Learn the secrets of making great gluten free bread
A book full of bread recipes is a good tool to have in your belt. With that book, you can conjure up a wealth of sandwiches, toast and treats. But there is nothing that beats watching my hands IRL. You learn more through feeling the texture of the dough and I can explain how to fix things when they don’t look exactly as described. How do you shape dough that is soft? How to fix bread that sticks on the knife? When is bread perfectly proved and what does overproved or underproved mean anyway?
I no longer have the convenience of teaching at River Cottage (I’ll tell you why privately) and have promised myself that I won’t trek up to London to share my knowledge with you, because it’s not good for my cortisol levels. If I choose some fancy cookery school, then only a few of you can afford to come. So my solution is to hire school classrooms and community kitchens and keep prices reasonable. Unfortunately, they aren’t in the most convenient places.






Everything ground to a halt with school hire over the summer holidays. The Bath venue I had my eye on has fallen through and I’m left with a school in Eastleigh and one in Southampton. I’m going to teach a class in one of those - Eastleigh has the edge currently. It could be on October 11th or 12th or November 1st or 2nd. Please email me if you would like to add your name to a list of takers and indicate all of the dates that you could attend so I can pick the one that suits most people. If you responded to one of my previous polls, I’ll also email you directly. I need to book this soon, so your deadline is September 15th. If enough people respond by then I’ll book the class. Fingers crossed.
A full day class from 10.30am until 3.30pm will be £150. Bring your own lunch and we’ll bake yummy things for afternoon tea. The class will be a mix of demo recipes to watch and sample and bake along recipes to take home.
If you know of a venue within two hours drive of Bridport that I may have overlooked, please let me know. I leave again for Fuerteventura in December, so time is short!
I’m also happy to offer online coaching if that is something you would prefer. From sourdough troubleshooting to shaping gluten free dough, making the perfect tangzhong or getting the crosses just right on your easter buns. I can offer thirty minute slots or one to one virtual classes.
